Seasonal Treats with Giant Coffee

Last year we sat down with Erin, Giant Coffee's head baker and manager, to discuss baking, coffee, and an out-of-this-world shortbread recipe. You can read our Q+A here.

Today Erin is sharing her recipe for Gluten Free Almond Butter Bars. A perfect, festive treat to make for family and friends this holiday season! These delicious and surprisingly light and moist bars already have a dedicated following here at Bunky Boutique. We are so excited to share with you!

Gluten Free Almond Butter Bars
with fresh cranberries & ginger

recipe adapted from mynewroots.org

Ingredients:

  • 1 1/2 C (380g) almond butter
  • 4 eggs
  • 1 C raw sugar
  • 2t vanilla
  • 1 1/2t baking soda
  • 1/2t salt

Mix-ins & Topping:

  • 1 C chopped fresh cranberries

  • 1/2t dried ginger OR 1t fresh grated ginger

  • 1 C chopped almond

PREP

  • Preheat oven to 325F
  • Grease one 8x8 or 9x9 baking pan

Instructions

  1. Beat almond butter, sugar, eggs and vanilla together for a few minutes minutes, until thoroughly incorporated and smooth. Add salt and baking soda and mix again briefly.
  2. Stir in the mix-ins, reserving a few cranberries and almonds to sprinkle on top.
  3. Pour batter into prepared pan, smooth out the top and sprinkle remaining cranberries and almonds on top.
  4. Bake for 25-30 minutes until golden brown, puffed, and no longer "jiggly." Allow to cool before slicing.

Q&A with Erin: Variations, baking ahead, & more

  1. What are some ways to make the recipe transition from fall to holiday season?
    For fall I would do maybe spiced apples or pears as the mix-in ingredients, moving into the winter holidays I like to use the fresh cranberries and ginger for the pop of color and bright flavors. You could also try adding just mint extract and chopped up dark chocolate if your crowd prefers chocolate desserts over fruit.
     
  2. Can these be prepared ahead of time?
    This can definitely be prepared a day or two in advance, just keep them wrapped tightly at room temperature and don't cut until you're ready to serve them.
     
  3. How do these represent Giant Coffee's baking aesthetic?
    They represent Giant's baking aesthetic in that they're not too fussy or require a ton of gluten free specific ingredients. We use organic fresh fruit such as these cranberries when in season, and always use cage free eggs in our baked goods. These bars are one of my personal favorites to both bake and eat, are really versatile and just happen to be flourless/gluten free too!

We had so so much fun at our first ever Bunky Book Club meeting! Our group of lovely ladies got together to unwind, discuss, and enjoy each other's company. Our fearless leader, Kristl Chavez, had us all scrambling to share our thoughts and insights.

We would like to give the warmest welcome possible to the newest member of our Bunky family, Ashley! She is a part time hustler and full time badass. We are so so lucky to have her positive, kind & creative spirit in the house. Be sure to say hello and test her Friends trivia knowledge when you see her in the shop! :)

"Hi! I’m Ashley, you have probably seen me in the shop on the weekends at Bunky. I wanted to use this as an opportunity to say hello and tell you more about me.  I have known Rachel since 2012, when we met at a gym and from there my relationship with Bunky and Rachel flourished.  I have been a customer of Bunky since and love what the store and brand represents.  I myself hail originally from Indiana and moved to AZ in 2008 for Grad School.  In 2010, I moved to Chicago, and met my husband Tristan.  We moved back to AZ in 2011, got married in 2013, and had a sweet baby girl, Olivia in 2014.

I reached out to Rachel a few months ago, looking for part-time work. My full-time job is working as a movement therapist at a Pilates studio in Cave Creek.  One of the main reasons I love this store is that it supports local business and growth, the style and vibe of the boutique, and it’s location.  The other women who are working at the boutique are amazing to be surrounded by and inspiring/fun/hilarious/and uplifting to be around!

My personal hobbies include Pilates (both teaching and self-use), hiking with my husband and daughter, hanging out with family and friends, and eating ice cream!  My style is relatively laid-back. I love flowy tops, printed pants, and simple accessories that finish the outfit!"

Our girl Ashley visited Leah at Juniper Botanical Spa for an art gel mani (one of Leah's many specialties!) using our new Leah Cardigan as inspiration, and we are LOVING how they turned out! Our cozy-knit obsession and addiction to Leah's killer nail art collided for one amazing manicure.

Make an assortment of mixers for a customizable marg bar, or keep things simple and make up a batch of mixer the night before!

Strawberry-Habanero Margarita Recipe
Makes 1 quart

Ingredients
1 to 2 habaneros, stem and seeds removed
2 pints strawberries, hulled
1/2 cup lime juice
1/4 cup triple sec      

Mas Agrios Margarita Recipe (Citrus)
Makes 1 quart

Ingredients
1 1/2 cup orange juice
1 cup grapefruit juice
1/2 cup lemon juice
1/2 cup lime juice
1/2 cup tangerine juice (or any seasonal citrus…have fun with it!)
1/4 cup triple sec    

Blend (or juice) the strawberry and habaneros/ citrus. Stir together with lime juice and triple sec and chill for one hour to allow the flavors to meld. Pour with desired amount of tequila (tequila blanca is recommended).

Classic Mojito
Makes 1 Mojito

Ingredients
2 mint springs
1/4 cup white rum
2 tablespoons simple syrup (or sugar, or a sugar cane if you are feeling fancy!)
1 tablespoon plus 3/4 tsp lime juice
1 dash Angostura bitters

"Using a muddler or handle of a wooden spoon, muddle 1 mint sprig in a cocktail shaker. Add rum, simple syrup (or sugar), lime juice, and bitters. Fill with ice, cover, and shake vigorously 20 times. Strain into an old-fashioned glass. Garnish with remaining mint sprig."
